This is a quick and very simple to make Soup! I’m sure you can tell from my previous posts that I’m a Soupaholic! Somehow I find comfort in making soups for my family, Its also a good way to get  vegetables into your kids. I saw this soup recipe on a show called Manic Organic, a show dedicated to growing organic produce. At the end of the show there was a cooking segment which included the  same produce that they had growing in the farm. What a great feeling to be able to grow such healthy, organic & nutritious produce and then use that same vegetables into a dish. Unfortunately Manic Organic is no longer airing but lucky for me I have most of the episodes  saved on my television’s DVR!

I roasted the carrots and the tomatoes in the oven, which brings out that extra flavor and sweetness in the vegetables. I roasted garlic along with fresh basil leaves drizzled with extra virgin olive oil. I used organic carrots & vine ripened tomatoes for the soup. I also used  store bought organic chicken stock for the soup. I poured the soup simultaneously for a distinguished look. You can see from the pictures that tomato soup has a rich red hue and the carrot soup has the lovely orange color which makes the presentation very dramatic. You can certainly impress you friends!   I topped the soup with a dollop of  Basil infused creme fraiche for extra  freshness & creaminess!

Wow, your presentation is gorgeous. It reminds me of the 2 little paisleys in a bowl, or of the Yin-Yang symbol. The recipe sounds delicious. Great job!

oh boy this looks so good! if only i saw this post before when i made my roasted carrots and wild rice soup–this idea with tomatoes is just a cherry on top of a one healthy veggie dish! must try it~!
