Grilled ~ Lamb Souvlaki w/Fresh Thyme

1 1/2 lb of lean boneless lamb 1 inch cubes
1/4 or less Olive Oil
juice of one lemon
2 tsp of fresh thyme
1 tsp fresh & dried oregano
2 garlic cloves
8-10 bay leaves, preferabley fresh
1/2 tst freshly ground black pepper
This dish tastes best on a grill. although I used a grill pan due to weather.
Marinate the lamb with olive oil, lemon juice, thyme, oregano, chopped garlic& black pepper in a bowl. Add the lamb & mix well & Refrigerate for 2 hours or overnight.
Thread the lamb cubes  skewers. Grill the kebabs over a grill pan until grill marks appear and the meat is medium well or medium. Keep brushing the kebabs with remaining marinade until cooked. I  threaded the bay leaves for a fresh look after the lamb was grilled & cooked, it makes for a nice presentation. Serve with some grilled & warmed on a grill pan, greek flat bread & kalamata olives on the side. ~ Enjoy!
