Fresh Tomato & Oregano Bruschetta

Oh Pomodoro, Oh how I Odoro you! Pomodoro aka Tomato is the “King” of all ingredients in the Southern Italian Cuisine. Roma or San Marzano Tomatoes are commonly used to prepare deilicious sauces to accompany the pasta. Canned San Marzano Tomatoes are as good But the fresh Tomatoes give the sauce a lot of texture and taste. Canned San Marzano Tomatoes from Italy can be commonly found in all Gourmet Supermarkets. I have used the Beautiful Red Vine Ripened Tomatoes for the Bruschetta for the Recipe Below! Fresh Tomato & Oregano Bruschetta Tomato & Oregano Bruschetta Ingredients: Good Crusty Bread Sliced 3 Roma or Vine Ripened Tomoatoes 2 cloves of Garlic Fresh or Dried Oregano, 1 tsp Drizzle of Olive Oil & Sprinkle of Salt Preperation: First Toast the Bread either in a Toaster or Grill it in a Grill Pan for the Grill Marks. Brush the Bread with Olive oil on both sides and toast it in the Grill Pan until the Grill Marks appear. Chop up Tomatoes, Garlic & Oregano. Mix the three ingredients gently. Spoon it over the Grilled Bread. Before Serving, Sprinkle some Salt & Drizzle some Extra Virgin Olive Oil to taste. Makes an excellent Impromtu Appetizer or a Healthy Snack! Enjoy!
